It's never fun to have to be the person who can only order a salad off the menu while others have a full meal with buttered rolls, or corn bread followed by great deserts.
When I was diagnosed with the auto immune condition Celiac disease (gluten allergy) , it was a serious blow to me because I am a self-professed foodie. What did I do? I laced up my boots and decided I had to continue to not only cook what my friends and family have always loved, but I had to learn to cook the same foods even better, plus some new ones that I could also enjoy.
As a public health advocate, with over 25 years in multiple health professions, currently pursuing my MPH in Public Health, Mimi King's Kitchen, LLC was established. It is my platform for providing delicious health conscious food options to people with gluten-free diets, or other restrictions and/or food sensitivities so that they too can still enjoy savory Soul Food and Caribbean cuisine.
